# 🫖 Dishoom's Masala Chai

## 📋 Ingredients
- 2 tbsp Assam or Darjeeling tea
- 12 slices fresh ginger
- 1½ tsp black peppercorns
- 12 cardamom pods
- 2 cinnamon sticks
- 5 cloves
- 50g sugar
- 500ml whole milk
- 1L boiling water

## 🔥 Method
1. Combine tea, ginger, peppercorns, cardamom, cinnamon, and cloves in a saucepan.
2. Pour over 1L boiling water. Bring to a boil.
3. Lower heat and simmer ~10 min until fragrant.
4. Add sugar and milk. Turn up heat and bring to a boil again.
5. Simmer for another 10 min, stirring occasionally.
6. Taste and boil a bit longer if you want it stronger.
7. Strain and serve hot. Discard solids.
