## Choosing Garlic
- Look for bulbs that are **firm**.
- If the garlic feels **spongy** or has **sprouts**, it’s still usable but will have **less flavor**.
## How to Peel Garlic
1. Take the full bulb and place it under your palm.
2. Press down firmly with your body weight to break it into individual cloves.
3. To peel cloves:
- Use your hands, **or**
- Place them in a **jar or between two bowls** and shake vigorously to loosen the skins.
## Chopping Garlic
- The **more you process or cut garlic, the stronger the flavor becomes**.
### Mincing Garlic
1. Take a clove and slice into it **lengthwise**, without cutting all the way through.
2. Then make **crosswise cuts** once or twice.
3. Finally, chop through the clove to form **small minced cubes**.
