## Ingredients
- ½ cup **coconut oil**, solid but scoopable
- 1¼ cups **light brown sugar**, packed
- 2 tsp **vanilla extract**
- ¼ cup **coconut milk** (preferably thick Thai-style, but any will work)
- ¼ cup **unsweetened applesauce**
- 2⅓ cups **all-purpose flour** *(be sure not to pack it)*
- 1 tsp **baking soda**
- ½ tsp **salt**
- 2 cups **chocolate chips**, divided *(use vegan chips if needed)*
- **Flaky sea salt**, optional (for topping)

## Instructions
1. Preheat oven to **375°F (190°C)**.
2. Line a large baking sheet with **parchment paper** and set aside.
3. In a large bowl, whisk together:
- Coconut oil
- Brown sugar
- Vanilla extract
4. Add **coconut milk** and **applesauce**. Whisk until well combined.
5. In a separate bowl, whisk together:
- Flour
- Baking soda
- Salt
6. Add the dry ingredients to the wet mixture.
- Stir with a **wooden spoon or sturdy spatula** until combined.
- The batter will be **very thick**.
7. Fold in **1¾ cups** of the chocolate chips.
8. Scoop **3-tablespoon sized mounds** of dough onto the baking sheet.
- Leave space between cookies for spreading.
9. Bake for **9–10 minutes**, until edges are golden and centers are set.
10. Press remaining chocolate chips on top of warm cookies.
11. (Optional) Sprinkle with **flaky sea salt**.
12. Let cookies cool on the baking sheet for **15 minutes**, then transfer to a **cooling rack**.

## Notes
- If the dough is **too sticky**, add more flour **1 tablespoon at a time**.
- If the dough is **too dry**, add more **coconut milk**, 1 tablespoon at a time.
